Chocolate Cookies with Filling
1 package of plain chocolate cake mix 8 Tablespoons of melted butter (1/2 cup) 1 large egg Filling: 2 cups sifted confectioners' sugar, sifted 1/4 cup vegetable shortening 1 large pasteurized egg white 1/2 teaspoon of vanilla Pie part: Bake: 350, ungreased cookie sheets about 2in apart make about 1inch size balls Dough will be stiff...use mixer to help. Bake about 10-12 minutes...I have a gas oven, it has a mind of its own so I used 10 min. Let cook for 5 min before removing from pan then transfer to cooling rack. Use about a tsp of filling for each cookie...or more. ;) Store at room temperature wrapped in plastic wrap for up to three days. Freezer: aluminum foil for up to 3 months. Can use ice cream instead of frosting. Enjoy!
Spanish Rice
Cook 6 cups of white rice.
On the stove top sauté 1 onion, any kind of peppers to taste, chopped tomatoes. After
veggie's are cooked add 1 package taco seasoning, some ketchup and brown sugar to taste.
Combine with rice and put in pan and cover with cheese. Eat as a side dish or dip with
chips.
Cheese Spread
1 cube butter with equal parts of mayonnaise. Add dried onion and garlic, oregano, season salt, lemon pepper, etc and 1/2 pound shredded cheddar/jack cheese. Place on top bread and put in 400 degree oven for 5 minutes.
