Cooking Elcira's Peruvian Dishes


Elcira, Jim's housekeeper made some incredible yams last night. Here is the recipe:


Elcira's Yams

2 large Yam (peeled and sliced in 1/2 thick slices)
Boil until almost cooked - Place in glass pan

In a sauce pan combine:
1/4 cup butter
1/2 cup sugar
1 1/2 Tbps white vinegar
2 Tbsp conrstarch
Pinch of salt

Cook until thick (It thickens fast)
Pour over yams and bake
If yams are still hot cook 15 minutes at 350.
If yams are cold 30 minutes at 350.

I have had these in restaurants and thought they were mashed potatoes but they were mach lima beans.


Puré de pallares, silky lima beans purée


This look like mashed potatoes but they are not. I hate lima beans but I love them fixed this way.

Total time: 9 hours
Serves: 4
Ingredients
  • 1 lb dried Lima beans
  • ½ onion, diced
  • 3 garlic cloves, diced
  • 1 thyme sprig
  • 1 tomato, peeled, seeded and chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper
Instructions
  1. The previous night, soak Lima beans in water, or at least for 4-5 hours.
  2. Drain and peel, discarding the peels. Cook the beans in a pot of water with the thyme sprig until tender or mushy.
  3. Meanwhile, in a saucepan heat the vegetable oil and cook onion and garlic until very tender. Add tomato and continue cooking over medium high heat. Add to the pot with the Lima beans, stirring continuously with a wooden spoon until very creamy. If you want a silky texture, use an immersion blender or pass everything through a food mill. Season with salt and pepper.
  4. Optional: Add grated cheese of your choice (Gouda, Edam, etc.)
  5. Serve with white rice.
  6. You can add butter, spinach that is pureed, etc
