Elcira is a wonderful cook. She has dinner on the table every night at 5 PM. Elcira's enchiladas are out of this world. The recipe is below.
Elcira's Enchiladas
4 cups tomato's (8 med size tomatoes peeled and diced)
2 cups diced onion (one large onion is about 2 cups)
4 cloves of garlic minced (4 cloves from 1 large garlic)
1/2 cube of butter
4 large chicken breast cut into bit size pieces
Brown the onions and garlic then add chicken and saute until chick is cooked.
Add the fresh tomatoes
1 tsp oregano
1 tsp basil
3 tsp cumin
1 cup salsa
tsp salt
Slim all ingredients for 20 minutes
Grated med cheddar cheese or cheddar/jack cheese
Need four cups.
Take 14 tortillas and a 9 x 13 glass pan
Fill with chicken and cheese
Take the chicken from the sauce and save enough sauce to cover tortillas
Stack the tortillas in two rows.
Cover with tomato mixer and cheese then put foil over enchiladas and bake for 30 minutes at 350.
It will take an hour to cook if made ahead and enchiladas have been in the refrigerater.
Serve with rice and salad.
